Gonna Quit going to see Doctors...

Yep, I'm thinking to quit going to see any doctors. (No, not really, it's just a negative thought wave I was having.) It seems every time I go, they find more problems, with some now showing up as severe.

I am a firm believer that we are all responsible for the consequences of our actions (including what and how we choose to eat), and I'm no different than anyone else in the aspect of how those choices affect us individually. However, I DO wish I had been better informed years ago about what consequences our food choices have on our health.

My food choices have been great for the last several years, but not so for the first 60 years of my life. (I think I can thank mis-information, advertising and greed for that.) I cannot change the earlier damage that's just now showing up, although hopefully I CAN keep it from getting worse by continuing a healthy, real food diet. I also hope I can pass along lots of healthy food information!

My young (under age 40) primary care physician will not agree with all my food choices, but I have to remember she's a product of what she was taught in medical school, which generally has little emphasis (if any) on good nutrition. She has already recommended a low- to almost non-fat diet and we know the brain thrives on saturated fats!

Medical schools teach how to treat or cure diseases, not how to prevent them. I simply cannot buy the concept of a low-fat diet (and those are too high in bad fats anyway), the excessive sugars found in many fruits and grains, and "foods" filled with fake chemical ingredients... vs. the real foods Nature intended.

Undeclared Aspartame in milk, yogurt?

The International Dairy Foods Association (IDFA) and the National Milk Producers Federation (NMPF) filed a petition with the FDA on 20 February 2013 to alter the definition of "milk" to secretly include chemical sweeteners like aspartame and chlorine-containing sucralose without them being listed on the label.

The full text of the Petition to Amend the Standard of Identity for Milk and 17 Additional Dairy Products may be found in the Federal Register here. Scroll down to "Food and Drug Administration, Proposed Rules" for the PDF.

The petition requests that FDA similarly amend the standards of identity for 17 other milk and cream products. Those standards (referred to as the “additional dairy standards”) are as follows:

Acidified milk (§ 131.111)
cultured milk (§ 131.112)
sweetened condensed milk (§ 131.120)
nonfat dry milk (§ 131.125)
nonfat dry milk fortified with vitamins A and D (§ 131.127)
evaporated milk (§ 131.130)
dry cream (§ 131.149)
heavy cream (§ 131.150)
light cream (§ 131.155)
light whipping cream (§ 131.157)
sour cream (§ 131.160)
acidified sour cream (§ 131.162)
eggnog (§ 131.170)
half-and-half (§ 131.180)
yogurt (§ 131.200)
lowfat yogurt (§ 131.203)
nonfat yogurt (§ 131.206)


According to Natural News: DFA and NMPF argue that nutrient content claims such as "reduced calorie" are not attractive to children, and maintain that consumers can more easily identify the overall nutritional value of milk products that are flavored with non-nutritive sweeteners if the labels do not include such claims. Further, the petitioners assert that consumers do not recognize milk -- including flavored milk -- as necessarily containing sugar. Accordingly, the petitioners state that milk flavored with non-nutritive sweeteners should be labeled as milk without further claims so that consumers can "more easily identify its overall nutritional value."

This is all being done to "save the children," we're told, because the use of aspartame in milk products would reduce calories.

In other words, hiding aspartame from consumers by not including it on the label actually helps consumers, according to the IDFA and NMPF!


Yep, consumers are best served by keeping them ignorant. If this logic smacks of the same kind of twisted deception practiced by Monsanto, that's because it's identical: the less consumers know, the more they are helped, according to industry. And it's for the children, too, because children are also best served by keeping them poisoned with aspartame.

Consumers have always been kept in the dark about pink slime, meat glue, rBGH and GMOs in their food. And now, if the IDFA gets its way, you'll be able to drink hormone-contaminated milk from an antibiotics-inundated cow fed genetically modified crops and producing milk containing hidden aspartame. And you won't have the right to know about any of this!

The FDA confirms this "secret" status of aspartame, stating, "If the standard of identity for milk is amended as requested by petitioners, milk manufacturers could use non-nutritive sweeteners in flavored milk without a nutrient content claim in its labeling."

The War on American Soil

Yes, there really IS a war on American soil, and it's about our Rights to real food... and being force-fed adulterated and nutritionally unhealthy foods instead. This war on our right to control what we eat could grow into a major conflict, and the Feds have already brandished guns on food raids.

I ended up being admitted to my local hospital 2 weeks ago, with what they thought were cardiac problems. Immediately they put me on a "heart-healthy, low-sodium diet", and if I had been there long enough I might have starved. It wasn't the lack of salt on the foods, but that most of the foods were inferior to the point of absurdity. In fact, one meal had canned green beans (commercially canned) that were so full of sodium I couldn't eat them. So much for a low-sodium diet. The only exception was a cup of fresh sliced apples with a few grapes for contrast. The other cooked fruit dishes (and juice cups) were so high in sugar (or some kind of sweetener) I gagged. No wonder we have an obesity epidemic, and skyrocketing diabetes.

The "butter" for my hospital wonderbread toast was Promise®, which is 60% GMO vegetable oils, water, whey from milk, with some chemicals and chemical vitamins added. How healthy is that? They gave me a list of foods to avoid, like processed cheese and hot dogs. Hell, I already avoid all those foods, and most intelligent people know they are not "real food".

I've been thinking about the control the government is trying to take on all of our foods. What started as a "war on drugs" 40 years ago has mushroomed into the government believing it has the authority to control everything we put into our bodies. (They only control alcoholic beverages and cigarettes to collect tax on it, not how much anyone consumes.) The war on drugs isn't being won either, and they are putting more pressure on controlling foods and supplements. Their propaganda machine (the CDC, Center for Disease Control, government owned and operated) has been working overtime, to the extent that almost everyone "buys" it, even doctors. "If the CDC says it's so, then it must be."

I do understand the need for some controls for food safety, like imported supplements of unknown safety, and particularly those foods that come from factory farms like milk, beef, pork, eggs and chicken. Some of those facilities are so foul that I won't eat anything from there no matter how safe they try to make it.

No milk comes from a factory farm that isn't pasteurized by law (cooked to destroy all pathogens but the cooking also destroys healthy nutrients like essential fatty-acids, enzymes and vitamins). The CDC says raw milk is unhealthy, but their own data from 1993-2006 shows on average 76,000,000 food-borne illnesses per year and only 116 of those were from raw milk.

A presidential election is coming in the fall, and I'll bet my last fiat dollar that food rights are never mentioned. I'll also bet that sooner or later, mothers are going to wise-up about nutrition and wage war on the government control of real food.

"Pink Slime" in Hamburger, what about Chicken???



This is mechanically separated chicken, an invention of the late 20th century. This particular paste, chicken -- is the main ingredient in chicken nuggets, chicken hot dogs, chicken bologna, and an ingredient in things like pepperoni, salami, jerky etc, etc. Mechanically separated chicken is also treated with ammonia for sterilization purposes, just as is Pink Slime. If you see the words 'finely textured' before the name of the meat, this is what you are eating...

Someone figured out in the 1960′s that meat processors can eke out a few more percent of profit from chickens, turkeys, pigs, and cows by scraping the bones 100% clean of meat. This is done by machines, not humans, by passing bones leftover after the initial cutting through a high pressure sieve. The paste you see in the picture above is the result.

The industry calls this method AMR – Advanced Meat Recovery.

The definition of "meat" was amended in December 1994 to include any "meat" product that is produced by advanced meat/bone separation machinery. "This meat is comparable in appearance, texture, and composition to meat trimmings and similar meat products derived by hand." This machinery separates meat from bone by scraping, shaving, or pressing the meat from the bone without breaking or grinding the bone. Product produced by advanced meat recovery (AMR) machinery can be labeled using terms associated with hand-deboned product (e.g., "pork trimmings" and "ground pork").

Mechanically Separated Meat (MSM)
Mechanically separated meat is a paste-like and batter-like meat product produced by forcing bones, with attached edible meat, under high pressure through a sieve or similar device to separate the bone from the edible meat tissue.

Mechanically Separated Poultry (MSP)

Mechanically separated poultry is a paste-like and batter-like poultry product produced by forcing bones, with attached edible tissue, through a sieve or similar device under high pressure to separate bone from the edible tissue. Mechanically separated poultry has been used in poultry products since the late 1960's. In 1995, a final rule on mechanically separated poultry said it was safe and could be used without restrictions. However, it must be labeled as "mechanically separated chicken or turkey" in the product's ingredients statement. 

The final rule became effective November 4, 1996. Hot dogs can contain any amount of mechanically separated chicken or turkey.

Are you really comfortable now with the meats the supermarkets are selling, or those in the fast food drive-throughs? Actually I do not blame them in general... they just buy a product they are told is edible (and aren't we all gullible?), and sell it to us. I blame the USDA and FSIS for allowing the corporate pressures and financial contributions of BigAg to determine what we eat.

Monsanto Threatens Vermont

The world’s most hated corporation is at it again, this time in Vermont.

"Despite overwhelming public support and support from a clear majority of Vermont’s Agriculture Committee, Vermont legislators are dragging their feet on a proposed GMO labeling bill. Why? Because Monsanto has threatened to sue the state if the bill passes.

The popular legislative bill requiring mandatory labels on genetically engineered food (H-722) is languishing in the Vermont House Agriculture Committee, with only four weeks left until the legislature adjourns for the year. Despite thousands of emails and calls from constituents who overwhelmingly support mandatory labeling, despite the fact that a majority (6 to 5) of Agriculture Committee members support passage of the measure, Vermont legislators are holding up the labeling bill and refusing to take a vote.

Monsanto has used lawsuits or threats of lawsuits for 20 years to force unlabeled genetically engineered foods on the public, and to intimidate farmers into buying their genetically engineered seeds and hormones. When Vermont became the first state in the nation in 1994 to require mandatory labels on milk and dairy products derived from cows injected with the controversial genetically engineered Bovine Growth Hormone, Monsanto’s minions sued in Federal Court and won on a judge’s decision that dairy corporations have the first amendment “right” to remain silent on whether or not they are injecting their cows with rBGH - even though rBGH has been linked to severe health damage in cows and increased cancer risk for humans, and is banned in much of the industrialized world, including Europe and Canada.

Monsanto wields tremendous influence in Washington, DC and most state capitals. The company’s stranglehold over politicians and regulatory officials is what has prompted activists in California to bypass the legislature and collect 850,000 signatures to place a citizens’ Initiative on the ballot in November 2012. The 2012 California Right to Know Act will force mandatory labeling of GMOs and to ban the routine practice of labeling GMO-tainted food as “natural.”

On the other side of the fence, Monsanto’s lobbyist and Vermont mouthpiece, Margaret Laggis employed inaccurate, unsubstantiated, fear-mongering claims to make Monsanto’s case. She warned during the hearings that if this law were passed, there would not be enough corn, canola, and soybean seed for Vermont farmers to plant.

Laggis lied when she said that the U.S. Food and Drug Administration (FDA) had done exhaustive feeding tests on genetically modified foods. Hansen corrected her, testifying that all of the GMO feeding tests submitted to the FDA were conducted by Monsanto and other GMO corporations and that the FDA had not done any GMO testing of its own.

Laggis lied again when she claimed that a recent Canadian study showing that more than 90% pregnant women had high levels of a genetically modified bacterial pesticide in their blood resulted from them “eating too much organic food” during pregnancy. Again, Hansen refuted this nonsense by pointing out that the Bacillus thuingensis (Bt) bacterium spray used by organic growers is chemically and materially different from the GMO Bt bacterium which showed up in the pregnant women’s blood and the umbilical cords of their fetuses. Hanson pointed that the high levels of Monsanto’s mutant Bt in the women’s blood was due to the widespread cultivation of GMO corn, cotton, soy, and canola.

The committee heard testimony that European Union studies have been conducted which showed that even short-term feeding studies of GMO crops caused 43.5% of male test animals to suffer kidney abnormalities, and 30.8% of female test animals to suffer liver abnormalities. Studies also have shown that the intestinal lining of animals fed GMO food was thickened compared to the control animals. All of these short-term results could become chronic, and thus precursors to cancer.

(Studies like these have prompted 50 nations around the world to pass laws requiring mandatory labels on GMO foods.)

In the end, none of the scientific testimony mattered. Monsanto operatives simply reverted to their usual tactics: They openly threatened to sue the state.

Unfortunately in the US, industry and the government continue to side with Monsanto rather than the 90% of consumers who support labeling. Monsanto’s biotech bullying is a classic example of how the 1% control the rest of us, even in Vermont, generally acknowledged as the most progressive state in the nation.

What it really comes down to this: Elected officials are abandoning the public interest and public will in the face of corporate intimidation."

Hyperpalatable Industrial Foods

They really do a good job, don't they, those scientists who create the taste and smell of adulterated food to seem real and delicious? As another blogger says, we are "Seduced by Foods".

Research and Development teams have done studies and conducted taste panels that have found "sweet" sells. The more they sell sweet stuff, the more people come to expect it. Sweet is found in loads of savory items too, not just sweet items. Tomato sauces, crackers, salad dressings, mustards, coated chicken products, sausages, and more. Many of our fresh products are also enhanced with sugar, like Butterball turkey, pumped brined pork loins, stewing hens. Our palates are being distorted by sweet.

As much as I am aware of the "deceptions" the food scientists have created, and as much as I am aware of the nutritive value in real foods, there are still times when I am lured by barely detectable smells and/or my mental images into thinking a fast food meal like a Big Mac, a taco supreme, or a take-out pizza* would hit the spot! Taste-wise I'm sure it would, thanks to those scientists who work hard to manufacture chemicals that tease our taste buds, and addict us to their pseudo foods. It is a very difficult temptation to resist! 

The tongue can detect five tastes: sweet, salty, sour, bitter and umami (savory). While you are probably familiar with the first four, umami is a taste that is relatively new to the Western palate, although the Japanese have known about it for decades. Umami is based on the detection of glutamate, and many foods naturally contain glutamate, although it is often added as well. You have probably heard of MSG: monosodium glutamate is the lab-derived chemical that enhances tastes. It makes things taste more like what they are (or should be). While umami is a taste that is hard to define, it is sometimes described as “meaty.”

The sense of small is probably the oldest and the least understood of our five senses. During evolution it has kept its connections with the parts of the brain, which grew to be the sorting house for our emotional responses, intimately linking the odors of things to our emotions. Think of the smell of BBQ coming from a grill at the BBQ joint down the street. Do you notice they have the grill/smoker outside or even vented outside, all the better to send those lovely smells in the air and capture us for a sale? It's an emotional response, our involuntary response to those smells wafting in the air. Researchers say 80 percent of the flavors we taste come from what we smell.

Our sense of taste is also triggered by sight. Ever notice the ads for foods on TV look SO juicy and tempting? Enough so that we have an emotional response that even overrides the reality of the supposedly same thing we are actually served. We salivate and feel the taste of a preferred food before even touching it. In the end, we believe more in what we see than in our other senses.

I have to constantly remind myself that those "almost foods" or "food-like products" come packaged with "micronutritional" malnutrition, and they can bring on (among other things) thyroid dysfunction, insulin resistance, and poor gut flora... all of which can lead to obesity. So many processed foods aren't really food, but nutritionally lacking "food-like products" engineered to stimulate us to eat more, buy more, and ensure that big food conglomerates turn a profit.

When most Americans eat a "hamburger", it isn't really meat they are eating. It's a "flavorless, factory-formed protein matrix for sugar and soy oils engineered to induce higher consumption".  Source

* I do eat pizza... but home-made, with real aged raw-milk cheese rather than pseudo "processed" cheese... tomato sauce from my garden without any artificial ingredients; true pepperoni that even real Italians would recognize rather than that imitation stuff made just for pizzas; fresh organic vegetables (onion, peppers) and mushrooms for toppings, and NO GMO soy or canola anywhere in sight.

My hamburgers are local grass-fed beef, and the condiments are lacto-fermented, home-made without all that sugar, although I think you can now buy good quality condiments with a dedicated search. I did look in the natural foods store yesterday for a mayonnaise without GMO soy or canola oil. None to be found.

When did Alaska move to China??

I was food shopping yesterday at a natural foods store (Harvest Moon, Floyd, VA) about a 2 hour drive from here, and saw "Wild Alaskan Salmon" in the freezer section. The packaging touted it was free of all the stuff I avoid, so I picked up a small piece. They were vacuum-packed in individual portions (I forget the weights) and although quite pricey, I thought I might treat myself to one package... I haven't had salmon in ages!

However, being the concerned shopper I have become... I took the package over to a stronger light so I could read the teeny-tiny fine print... only to read that this "Wild Alaskan Salmon" was a product............ of China!!!

Well, I want to know just WHEN Alaska moved to China?? 

How can they advertise wild Alaskan salmon on the package when it's from China??? No doubt it's also farm-raised. And for God's sake, this was for sale in a health foods store!!!!!!!

Farmers against Monsanto



"On January 31, family farmers will take part in the first phase of a court case filed to protect farmers from genetic trespass by Monsanto’s GMO seed, which contaminates organic and non-GMO farmer’s crops and opens them up to abusive lawsuits. In the past two decades, Monsanto’s seed monopoly has grown so powerful that they control the genetics of nearly 90% of five major commodity crops including corn, soybeans, cotton, canola and sugar beets.

In many cases farmers are forced to stop growing certain crops to avoid genetic contamination and potential lawsuits. Between 1997 and 2010, Monsanto admits to filing 144 lawsuits against America’s family farmers, while settling another 700 out of court for undisclosed amounts. Due to these aggressive lawsuits, Monsanto has created an atmosphere of fear in rural America and driven dozens of farmers into bankruptcy. 2012... and Beyond

The year 2012 should be interesting.

Many folks have an underlying (or at least partial) belief running through their subconscious mind that Nostradamus' and the Mayan "end of the World" scenarios might happen. However, most of our overt behavior indicates total disbelief not only in Doomsday predictions, but also in accepting the critical food/water/health situation worldwide. (Isn't the media wonderful?) Our changing weather patterns continue to impose hardships on many of our lives and gardens, giving credence to possible violent environmental changes that could be coming to this lovely blue planet we occupy.

Personally, I do not believe the "end of the world" will happen in December 2012. However, the environmental, economical and political changes are not only continuing, but increasing... and it could get right nasty down the road.

There is another prediction out there, proclaimed by many, that the "changes" will usher in a "thousand-year era of Peace". IMO, there is much that needs to be significantly altered before real Peace can happen.

On our food and health aspects for change, it is time for us to increase our awareness and ethical/moral responsibility beyond what the for-profit television and advertising media tell us... because ultimately our health/future Is NOT Up to Someone Else.

GMO's have proliferated simply because we didn't raise any flags in the beginning. It is our own fault. For too many years we have allowed ourselves to believe that others ("medical professionals and government officials?") know best, or at least know what they are doing. We are bombarded hundreds of times a day by subtle advertising messages indicating "they" are more educated and/or informed than we are, so the vast majority have given up individual responsibility for our own health and well-fare. Our self-inflicted ignorance has let the government (and us) buy into corporate hype of all kinds (which interestingly also put money in many, many pockets). 

Thus the many corporate tribes and alphabet government agencies motivated by... (power? greed? or something else??) have given us obesity and disease by catering to and building on a human weakness for convenience, sugar and other junk foods. We have become a nation of addicts... and we are addicted to all kinds of substances. For far too many people [including children], it is sugary beverages and junk foods, while for others it might be an escape into alcohol or drugs. But as with any addiction, we never think with 100% clarity under the influence... and will do almost anything to keep getting our "fix" in spite of what our minds know. 

As a nation, we eat more so called "food" and gain less energy (nutrition) from it all the time. The working mother eating the SAD diet (Standard American Diet) has NO energy left to prepare real food meals when she comes home from work, even if she could buy real food anymore in most places. (She says she doesn't have "time" but in reality, she also doesn't have the "energy".) So instead of having enough energy to prepare a real food meal, she barely has the energy to pick up junk fast food on the way home, or frozen boxed junk food to nuke for dinner for the family. Eating this way, she never gains a storehouse of energy for the next day, and simply repeats the process over and over, becoming more frazzled every day from lack of good nutrition. 

Adele Davis always said a food without nutrients would not support life, and her example was a loaf of factory bread left on the counter (unwrapped) for weeks. It might dry out, but it would not support any bacterial life to decompose it. If it won't even support bacterial life, how could it support life for us?? Recently someone left a McD's cheeseburger on the counter for a whole year, and nothing grew there either. It sustained no bacterial life. (Source)

Change is never easy, but for the most part it can be started in small steps. Two years ago when I changed my food intake drastically to eliminate adulterated foods all at once (including foods with added sweeteners), I thought I would starve to death during the first 2-3 weeks. It took a long time for me to learn to think outside the box and change from what I had been accustomed to eating for years, to finding real foods to eat. Then as I started feeling the increased energy every day from eating real food (and probably eliminating some built-up toxins during that time), I began to understand what sugar and chemical-laden foods do to my body.

Unfortunately over the last year, I have slowly added some adulterated foods back to my diet, and I really see the poor consequences, both in my energy levels... and my weight. The good news is that I never deviated from my commitment to eating only grass-fed meats. I'm doing much better now in avoiding chemical-laden packaged foods (thus no GMO's) but where I am still struggling is to get sugars out of my diet again. The traditional and accepted flush of sweet goodies over the holidays put me right back into sugar addiction, and I really cannot totally blame the food industry... They only make the stuff; it's my hand that lifts the cookie to my mouth. 

Then there are the sweets in other foods... "research and development teams have done studies and conducted taste panels that have found sweet sells. Some small but positive steps:
Make a commitment to one family meal every week or two that contains only real foods. Nothing from a chemical-laden package (cookie/cake mix, packaged salad dressings, sweetened yogurt, BBQ sauce, yada, yada), no GMO's. You probably cannot escape the GMO's in the meats from factory meat animals, including chickens and their eggs, unless you can afford pastured meats... but start somewhere. No fake butters, no canola or soy oils (both GMO's), no sugar substitutes, nothing fake. I know many of the regular readers of this blog eat real foods almost exclusively... but perhaps just as many readers do not.

Make the time for a friendly email or telephone call to your local congressional representative saying you'd like to see food labels that state GMO or not, and hopefully even whether routine animal antibiotics in healthy animals were used. Tell them politely that you'd like to know what's actually in your food.

It may take years of persistence, but remember the soil in our yards is the result of eons of weathering effects on rocks that turned them into soil.

Health Care vs Illness Care

We should start naming things as they really are, not what someone would like us to believe. What we really have is Illness Care, NOT Health Care. Very little money is ever spent to promote "Health Care" because Health is NOT profitable.

The human body is extremely complex, and we have hundreds of thousands of internal interactions going on at any given moment from our 400 hundred trillion cells. Those interactions are also interdependent, and although our bodies have the ability to fabricate some of the components, we still need some raw materials for manufacturing them.

For a different picture for understanding, think about the group children's game we call jump rope; when typically done by 3 or more children it's called long rope jumping. If you have 3 children and a rope, you can play. Remove any one component, and there's no game. 2 children and a rope but no jumper... no game. 3 children and no rope, no game.

Micronutrients (meaning we don't need much of them) like the fat-soluble vitamins have a 'game' (interaction) going on in our bodies too, and if any one of them is MIA, the 'game' suffers. Please note that these essential fat-soluble vitamins can only be dissolved in saturated fats in the body (hence their name). A healthy liver will store any excess, unlike the water-soluble vitamins which we rapidly excrete in urine. 
Vitamin A (egg yolks, liver, whole milk, cheese) is needed for eyesight, in other words "essential for the neural transmission of light into vision". All the fat-soluble vitamins (A, D, E, K) need a bit of all the others to function (play the game) properly.

I find it interesting that the amount of Vitamin A in egg yolks in the Netherlands is more than twice the amount in the US. I wonder why? What they are fed (non-GMO?) and how they are raised? Curious. source

Vitamin D (from sunlight, or oily fish like herring, salmon and sardines) helps the body absorb and use calcium, but you also need to ingest enough of the right kind of calcium for it to work... and then it takes Vitamin A to make the interaction work, too. (Vitamin A binds the Vitamin D receptors). Likewise if you take calcium supplements but don't get enough A or D, the calcium is useless.

For Vitamin D to work, it also needs the minerals magnesium (green vegetables, nuts, whole grains), zinc (oysters, wheat germ, liver) and boron (green vegetables, fruit, nuts). The other catch is you also need enough Vitamin K (green leafy vegetables) to regulate the entire fat-soluble system.

The fat-soluble vitamins (except E) come from the very animal foods the "health care" industry tells us to reduce or avoid altogether: eggs, butter, and organ meats like liver. (BTW, coconut oil is considered a good saturated fat but contains almost zero vitamins and minerals. The main benefit in coconut oil is the Lauric Acid content, which promotes the "good" cholesterol, HDL.) 

There are many, many other nutrients which are equally essential for good health, and our bodies can utilize them all much better in the form of real food rather than supplements. However, just like the fat-soluble vitamins, most are interdependent on a host of others for maximum nutritional function. Who tells or teaches us that??

It seems the best way to have real health care is in our own hands. If we don't take responsibility for ourselves and our health, who will??

Try this: On your own, research some foods for their nutritional amounts. Research your own nutritional needs for the foods that supply them. If the information comes from research, find out who paid for the research; it is too often biased. Look for the sin of omission, where they tell us the part they want us to know rather than the whole picture.

The spin on many industrialized foods now being promoted as "healthy" is just that: spin. I have to be vigilant about reading labels on foods. A package of crackers I picked up in the natural foods market last weekend had huge advertising all over the front of the box exclaiming "Now made with whole grains!". When I read the label, sure enough there were whole grains... but last on the list just before the chemicals (labels are required by law to list ingredients in descending order of the quantity). The first ingredient was "enriched white flour"... I put it back on the shelf. Deceptive advertising, in my opinion.

Getting and staying healthier is much harder when the truth is so hard to find amongst all the hype. In my opinion, food labels should also list ALL the vitamin amounts, as well as all the herbicides, pesticides, irradiation and chemical washes the food has endured.

I repeat: It seems the best way to have real health care is in our own hands. If we don't take responsibility for ourselves and our health, who will??

Fallen Symbols of Integrity

I hate this! My last remaining "symbol of integrity"... Scotland Yard... has fallen into corruption.

For many, many years I read English Mysteries, and The Yard always stood for honor, virtue, and incorruptibility.

I have come to expect a lack of moral fiber from our own US police (and politicians) based on observations and news stories which have been increasing over the last several decades. I didn't expect it of Scotland Yard!!

Is there no one left at all whom we may trust?

The Food Threat to Our Health

I don't usually post what others have written, but this is too important not to pass on in case you missed it elsewhere. I generally prefer to write about what we can do at home for ourselves to combat what the government is doing against our Health and Well-Being, but sometimes that is not enough.


"The case against genetically modified (GM) crops has been growing for years.  While there are no long-term studies on the health effects of eating food from GM crops, even short-term studies have raised very troubling questions.  For example, a panel of scientists in India recently reviewed studies that purported to show that GM crops modified to produce Bt were safe. The reviewers concluded that the studies did not meet international standards, did not accurately summarize the results, and “ignored toxic endpoints” that occurred in rats that were fed the GM grain for just 3 months.  The rats suffered organ and system damage to ovaries, spleens, and the immune system, and demonstrated toxic effects to the liver [L. Gallagher, BT Brinjal Event EEa: The Scope and Adequacy of the GEAC Toxicological Risk Assessment: Review of Oral Toxicity Studies in Rats (2010)].  Other studies have come to similar conclusions, namely that even a relatively short period of feeding GM foods to lab animals indicate serious potential health impacts.

Despite that, the U.S. Food and Drug Administration (FDA) continues to allow GM crops to enter our food supply without labeling, leaving the majority of Americans in the dark about the fact that almost every processed food contains ingredients from GM corn, soy, and/ or canola.


As serious as these problems are, the concerns over GM crops rose to an even higher level recently. On January 17, 2011, Dr. Don M. Huber, an internationally recognized plant pathologist and Professor Emeritus from Purdue University, sent a letter to U.S. Secretary of Agriculture Tom Vilsack warning him of a previously unknown pathogen that "should be treated as an emergency."  As explained in the letter, the pathogen poses a serious threat to plant health, animal health, and potentially human health – and has been connected to GM crops engineered to be resistant to the herbicide Roundup, whose active ingredient is glyphosate.

“Roundup Ready” crops, as they are called, allow farmers to spray the herbicide glyphosate to kill weeds throughout the growing season.  This has two effects: it significantly increases the amount of glyphosate used, and results in glyphosate residues on the crop itself.

As outlined in Dr. Huber’s letter and subsequent materials, veterinarians first identified this organism in livestock herds experiencing extremely high rates, up to 45%, of spontaneous abortions and infertility rates of 20% and higher. The vets confirmed that the pathogen was the cause of the problem, and then searched for the source of the pathogen, ultimately finding it in the animals’ feed. The contaminated feeds were made from Roundup Ready soy, Roundup Ready corn, and crops raised for feed in fields treated with glyphosate.

The connection was then made with plant pathologists who have been working to understand the growing scope and severity of plant diseases such as Goss’ Wilt in corn and Sudden Death Syndrome (SDS) in soybeans. When examined, the new pathogen was found in very high levels in the infected crops.

Dr. Huber’s January letter urged Secretary Vilsack not to approve Roundup Ready alfalfa and to conduct research on the relationship between Roundup Ready crops, glyphosate, and this new pathogen. The USDA chose to ignore this warning and less than three weeks later approved two new GMO crops, including Monsanto’s Roundup Ready alfalfa, creating a threat to the primary forage feed crop for US livestock.

The letter, although intended to be confidential, was leaked by a third party, after which Dr. Huber gave permission for the Farm and Ranch Freedom Alliance and others to post it.  The now-public letter unleashed a storm of accusations and recriminations, including a quick response from Monsanto.  Yet, while Monsanto and its allies attacked the letter, they presented no evidence that contradicted it – just their own unsupported claims that circled around Dr. Huber’s statements without addressing them directly.

E. Coli in gene splicing, used to make GMO's

WHAT are THEY doing to my food??  I thought I had it mostly all figured out when I recently posted about the contaminated animal manure sludge being spread on our agricultural fields as one probable cause of the E. Coli outbreaks in Europe. Turns out it still might be that, plus something even more insidious... e. coli in their genes.

GMO foods now control the majority of the grocery shelves, and although I try to stay informed, somehow I totally overlooked (or forgot) the fact that Monsanto and others use E. Coli in gene splicing in order to manufacture GMO's. 

Now, I really do know not all strains of E. Coli are bad... my intestines would not function to convert ingested food to energy and/or bodily functions if I didn't have a resident host of beneficial E. Coli in my system.

However, when companies splice in not only E. Coli genes, but also antibiotic suppressor genes... who is to really know what that might create or evolve into, without years of independent testing before subjecting humans as test objects? Could replicating seeds that are E. Coli gene-spliced be the bottom line (the source) to the recent European E. Coli outbreak that reached the US during the first week of June, 2011?

Here's how gene splicing works:

1) A piece of DNA from the target cell is removed

2) A strand of E. coli bacteria DNA is inserted in it's place.  Cells are naturally resistant to gene splicing, (it doesn't take a rocket scientist to figure that out), so you actually need to "infect" the food cell with a bacteria in order for the gene splicing to take place

3) Because cells will try to eliminate bacteria, there is also a DNA strand of an antibiotic suppressor inserted.  Pharmacists are cringing at this thought, especially since we are already in danger of becoming immune to many antibiotics!  Injecting an "anti" antibiotic into our food can NOT lead to anything good!

4) Finally a piece of genetic code for the "round-up ready" trait is inserted.  Methods of insertion include using a "gene gun" which injects all this DNA junk with little pieces of gold to help destroy the cell membranes.

5) The end product that is manufactured often is covered with tumors because of the bacterial infection that ensues.

6) Yay, now we have "food" that won't die when you put deadly chemicals and pesticides all over it in the field. Congratulations! Can't wait for dinner! (Read as sarcasm, please!) Source

Just 3 companies now control 85% of all the seeds world-wide. The only way to be sure of safe seeds is to grow open-pollinated or heirloom vegetables and hope there are no GMO fields nearby that can cross-contaminate your crops... then save your seeds. The growing number of seeds spliced with the Terminator Gene is frightening, although they are supposedly not used in the marketplace yet. The last I read on Terminator Technology was over a year ago, and the US Government then owned more than half of all the patents. WHY?

Ag Gag Bills

I've been watching the proliferation of recently Ag-Gag Bills, and frankly I am fed up with BigAg trying to run my life, and to hide from whistle-blowers. Right now BigAg is pushing legislators in Florida, Minnesota and Iowa to criminalize taking photos or videos of their facilities. (Update: the Florida Bill SB 1246 failed.)

I'm pretty sure not all CAFO's are ugly and inhumane ... but some are. Now "they" want to make it a crime to take photos of a facility that indulges in practices that would turn our stomachs, much less the thought of buying their meat.

What are they fearing? The way factory farming mistreats animals, workers AND the environment? 

Environmental Protection Agency head Lisa Jackson assured a gathering of agricultural leaders in Iowa that her agency has no plans to regulate farm runoff, despite its hazards. 

On the other hand, the Des Moines Register reported, “Runoff of nitrogen and phosphorus from farms damages water quality in Iowa and elsewhere in the Mississippi basin and contributes to a dead zone in the Gulf of Mexico.”

The Bill approved in the Iowa House and Senate sponsored by Rep. Annette Sweeney, a Republican and a former executive director of the Iowa Angus Association, would not only punish whistleblowers but also those who take jobs for the sole purpose of exposing abuses. Those convicted could face penalties include fines of up to $7,500 and five years in prison. 

People for the Ethical Treatment of Animals, or PETA, say: “They’re trying to criminalize someone being an eyewitness to a crime,” Jeff Kerr, the organization’s general counsel, said. The measure was introduced after humane groups released videos showing chicks being ground alive and pigs being beaten and shocked.

Kansas and Montana have passed anti-whistleblower laws, and though they aren’t aimed at secret filming in factory farms, Tom Laskawy from Grist says the effort is coordinated. “Big Ag has been known to coordinate legislative campaigns state by state,” he said, pointing to Monsanto’s ultimately unsuccessful push to prohibit labels on milk that alert customers to the presence of artificial hormones.

A bill introduced in the Minnesota House in early April punishes not only videographers who pose as workers and record the inhumane treatment of animals, but also those who distribute said videos. The bill seeks to make it a felony to disrupt operations at factory farms, a component intended to punish activists and protesters. One of the sponsors is Rep. Rod Hamilton, a former president of the Minnesota Pork Producers.

I DO have a problem with the Animal Agriculture Alliance inferring that "Radical Vegans" are behind some of the photos. However, they do say these people shouldn’t have to sneak the cameras into the farms that are torturing animals or mistreating workers: the cameras should already be there. It should be the state’s responsibility to find and monitor the few farmers that are giving the rest of them a bad name. You want to quiet the crazy vegans with the video cameras? Do their job for them.

ALERT!!!

I just received this email from Sarah Alexander, Outreach Director, Food & Water Watch:

"I was outraged when I found out that Jack DeCoster's eggs, which are at the center of the largest egg recall in history, are ending up back in our food supply. Recalled eggs shouldn't get a second life in the food system as liquid or powdered eggs.

Jack DeCoster is the "habitual violater" who's at the center of the massive egg recall.  Unfortunately he's still making a profit from his bad eggs because they are now being made into liquid or powdered eggs, and being put back into food products like ice cream, pies and cake mixes.

Under current FDA rules this is totally legal, but we think that if eggs are bad enough to be recalled, they should be destroyed, not put back into our food.
"

I'm outraged too! Although I don't buy liquid eggs (like Eggbeaters) or products that contain liquid eggs like mayo (I make my own, fresh), I do occasionally buy ice cream which usually contains egg yolks. I don't buy products that may contain dried eggs only because I don't buy most products requiring any label at all. I also don't eat scrambled eggs from a restaurant food bar.

But YOU might... and should be outraged too.

Kellog's Boycott and Food Labeling

No, not the boycott of Kellogg's cereal company for dropping their sponsorship of Olympian Michael Phelps after he was caught on film smoking from a bong... but instead, the boycott by the Organic Consumers Association to stop Kellogg's from using GMO (biotech) sugar.


If you joined the OCA boycott, you probably received this letter from Christina, their "Consumer Specialist":

Thank you for your comments regarding the use of biotechnology ingredients. Like you, we want only the best ingredients to go into our products.

Biotech ingredients are safe and have become common in the open market. Sixty to seventy percent of packaged foods in the U.S. include biotechnology crops. Even organic ingredients can contain biotech ingredients due to cross-pollination.

We use biotech ingredients based on the backing of groups including the World Health Organization, the U.S. National Academy of Sciences, and the American Medical Association that confirm there are no safety concerns.

I do agree with the statement: "...have become common in the open market. Sixty to seventy percent of packaged foods in the U.S. include biotechnology crops. Even organic ingredients can contain biotech ingredients due to cross-pollination."

However, the statement that GMO's can contaminate organic crops... is an admission growing biotech crops is not a controllable situation. And the fact that 60-70% of packaged foods in the US now contain GMO's is alarming, or worse, since NONE of them are labeled as such. (I have recently read the percentage of GMO's in foods is actually much higher.)

If I believe GMO's are harmful for my health (and I do)... how could I possibly avoid them if they are not labeled?? 


Lectins are naturally found in most foods, but how much lectin varies with different foods. The amounts of lectins present in many foods are not thought to be high, or as potentially toxic as lectins in just a few food groups. Common foods with known toxic lectins include all soy and wheat products including oils from these substances.  Lectins are often spliced into modified varieties (GMO's) in order to enhance “natural” pest and fungal resistance. Furthermore, lectins have been associated with leptin resistance, a pre-diabetic condition linked to obesity (and is very similar to insulin resistance). 

How would a pre-diabetic who is studiously avoiding grains and legumes know he was still getting lots of lectins in his other packaged foods via 'biotechnology' if they aren't labeled?

Goodbye, Haagen-Dazs

Haagen-Dazs is not quitting... I am quitting them. Or at least until they stop using rBGH (bovine growth hormone) milk in their ice cream. Several other major brands have now guaranteed their dairy products are rBGH-free: Ben and Jerry's, Starbucks, Yoplait yogurt, Dannon, Tillamook cheese, Chipolte restaurants, and many more.

Haagen Dazs, Breyers, Edy's, Nestle's, Baskin-Robbins and others have not.

rBGH is a genetically engineered bovine growth hormone developed and marketed by Monsanto for years until they sold it in 2008 to Elanco, a division of the Eli Lily drug company. The hormone is injected into cows to increase milk production by 10-15%. However, the drug causes many problems in dairy cows such as painful mastitis, deformed calves and lameness, and is linked to health problems in humans. It has been banned in Canada, New Zealand, Japan, Australia and all 27 of the European Union countries since the year 2000, if not before. Of course, Monsanto assures us it is safe.

A 1991 report by Rural Vermont, a nonprofit farm advocacy group, revealed serious health problems with the rBGH-injected cows that were part of a Monsanto-financed study at the University of Vermont. Problems included an alarming rise in the number of deformed calves and dramatic increases in mastitis, a painful bacterial infection of the udder which causes inflammation, swelling,11 and pus and blood secretions into milk12. To treat mastitis outbreaks, the dairy industry relies on antibiotics. Critics of rBGH point to the subsequent increase in antibiotic use (which contributes to the growing problem of antibiotic resistant bacteria) and inadequacies in the federal government's testing program for antibiotic residues in milk13. The FDA relies on pasteurization to kill off bacteria, hormones and antibiotics in milk.

Injecting rBGH into dairy cows increases the amount of a substance called IGF-1 in their milk, by as much as six-fold (source). Why does that matter? The European Commission's authoritative international 16-member scientific committee reported the excessive levels of IGF-1 found in the milk of cows injected with rBGH may pose serious risks of breast, colon and prostate cancer.

How serious is the increased risk? According to an article in the May 9, 1998 issue of the medical journal The Lancet, pre-menopausal women with even moderately elevated blood levels of IGF-1 are up to seven times more likely to develop breast cancer than women with lower levels. How this nasty Monsanto drug became part of our dairy industry is well-noted in this article by John Robbins (son of Irving Robbins who co-founded Baskins-Robbins). Some of the other offensive moves by Monsanto and collusion by the FDA are reported (scroll down in the article) here. 

Several of my friends have developed breast cancer, and some had radical mastectomies. I'm appalled at the FDA for allowing continued use of unmarked rBGH in our milk supply (cheese, butter and yogurt are included, too). We are not allowed to buy raw milk because we "might" get foodborne illnesses, but we can have all the milk we want that could cause cancer.

So, Goodbye Haagen Daz... Goodbye Baskin-Robbins, Edy's, Breyers and anyone else who still uses rBGH in milk and milk products.

Omega 6, Obesity and Type 2 Diabetes

Omega 3 and Omega 6 are lipids... EFA's (essential fatty acids). We cannot manufacture them in our bodies; we must get both of them from foods. We hear a lot about Omega 3 from fish oils, but we seldom hear very much about Omega 6 in anything, whether food sources, news, or health warnings.

It is not only important that we get both Omega 3 and 6 in our foods, but it is very important that we get them in the correct ratios. Research scientists recommend ratios varying from 5:1 to 10:1 omega-6 to omega-3, but some experts suggest a ratio of between 1:1 and 4:1 as being optimal. The average in the US often is between 30:1 and 40:1!

ScienceDaily reports a study now linking excessive Omega 6 coupled with insufficient Omega 3 to increasing obesity in generations, and metabolic disorders like insulin resistance (which is the first step in developing Type 2 Diabetes). Over the last 40 years the amount of Omega 6 we consume has increased over 250%, while the amount of Omega 3 we consume has dropped by 40%, increasing the ratio dangerously.

When the intake of Omega 3 & 6 is unbalanced, it can have serious long-term effect on human health.

Where do we get Omega 6? Mainly from corn (maize) and wheat, which are themselves consumed in large quantities by the farmed (CAFO) animals eaten by humans. (Half our lipid intake comes from meat and dairy products.) We also get Omega 6 from food oils like palm, soybean, rapeseed (Canola), and sunflower.

Where do we get Omega 3? Omega 3's are mainly present in grass, so any grass-fed-only animal (including chickens, and their eggs) will be high in Omega 3. Other sources are fatty fish like salmon, sardines and mackerel.

I do not believe the Obesity Crisis is just due to eating too many calories, but due to eating too many of the wrong calories. Since I severely cut my Omega 6 intake several months ago to a better balance with Omega 3, I have lost well over 25 pounds even though my daily caloric intake is now higher. 

So I have to question why 'they' keep pushing 6-11 servings a day of grain products (Omega 6) on us? Why 'they' keep saying grain-fed beef and grain-fed chickens (mostly from CAFO's) are healthy for us? (Duh. They are cheaper to grow because they are heavily subsidized, and they are highly profitable.)

Smart Chickens

When an animal refuses to eat its regular feed it is often a clear sign that something is wrong with the food. Animals, as opposed to humans, tend to have a “sixth sense” about what’s safe to eat, and what’s not.

I know that to be true in my own house. I have a loss in the sense of smell, and because of it, I am often afraid of foods that have been refrigerated more than a couple of days since I cannot smell them unless almost putrid. My solution has been to give a sample of questionable food to my (now-deceased) fat cat. If she refused it, the food went into the trash or compost. 

A 2003 report on the British Institute of Science in Society (ISIS) web site states that both experimental and anecdotal evidence shows animals seek to avoid GM food, and do not thrive if given no other choice.

Last year in South Africa, chickens refusing to eat the maize (corn) they had been fed led to the discovery that their feed had been genetically modified to include a well-known weed and insect killer.

Owner Strilli Oppenheimer was approached by Dawid Klopper, the head gardener at the family estate, Brenthurst, informing her that her indigenous African chickens were refusing to eat the mealies in the chicken feed bought from a large supplier. Concerned that the birds may be ingesting genetically modified maize, she instructed Klopper to have the maize tested.

The chickens' diet was immediately changed to include organic vegetables, and the Oppenheimer family stopped consuming the home-grown eggs. The maize was sent to the GMO testing facility at the University of the Free State for analysis. The results confirmed Oppenheimer's initial suspicion - the maize had been genetically engineered to produce proteins that are toxic to certain insects and weeds.

"It contained BT1 which makes the maize insect resistant, as well as Roundup which makes it weed resistant. This is the first report we have had of chickens not eating GM feed," said a GM expert. 

Oh, really?

While small quantities of BT1 and Roundup weed killer were found in the seeds, the concern remained with the cumulative effect of GM feed, not only on the chickens, but also on the eggs they produced for the family.

"This is of serious concern. Do you know that 96 percent of soy-based foods are genetically modified, and that maize in South Africa is contaminated?" asked Oppenheimer, pointing out that research by well-known scientist Dr Arpad Pusztai had shown that rats fed on GM potatoes suffered from a weakened immune system and stunted growth of their internal organs, including the liver, kidneys and brain.

Pusztai was fired by the Rowett Research Institute in the UK in 1998 after his research into the human nutritional consequences of GM. His findings had far-reaching implications for the biotech industry, which had contended that GM crops and products would not adversely affect human health.

Yeah, it's harmless... right?
